Brownie Bread Pudding: Keto Style


What makes this dessert so special in comparison to traditional bread pudding? The low carbohydrate ingredients like almond flour, so their isn't actually any bread or wheat flour in this recipe. Its great for those guests who have gluten sensitives or following a gluten free diet. This dessert or mid-afternoon snack can be fun, delishious and consumed by everyone.


Ingredients:

  1. 3 eggs

  2. 1/4 cup heavy cream (35%)

  3. 6 packets of Kiss My Keto brownies, crumpled or 2/3 pan of Keto brownies (made from package mix) https://bit.ly/2LNSJlb

  4. 1/3 cup of almond milk

  5. 1 tsp vanilla

  6. Berries (optional)

Beat eggs, cream and almond milk in a bowl. Add crumbled brownie and vanilla. After mixing together, let stand for 30 minutes so the brownies can soak up the liquid. While you wait, grease up a pan (8 inch loaf pan) with butter and preheat the over to 350F. Poor batter into the pan and bake for 35 minutes. The centre needs to stay giggly. Slice and serve with berries I prefer to use raspberries.




Serve with afternoon coffee or tea with guests or enjoy on your own. You can fancy it up with Kiss my Keto whip cream or walnuts. Of course it is best to serve it while its still warm or heat it up a little before serving.
